The De Buyer Carbone Plus is structurally identical to the Mineral B frying pan – the only differences being that the Carbone Plus lacks the beeswax treatment and has a more heat-resistant handle made of reinforced cast iron. Wash the pan with hot water to remove any storage dust before first use. You can also season the pan if you wish – see instructions in the video link below.
Carbon steel is not as porous a material as cast iron, so you can confidently cook all ingredients in it. With ingredients with a high protein content, such as eggs or white fish, it is advisable to be careful and lower the temperature significantly. You shouldn't try to keep the carbon steel bright steel-colored, as it will change color during use. The pan's interior surface will darken, and when the interior surface is completely black, its natural non-stick surface is at its best.
The carbon steel pan should not be washed in the dishwasher; hand washing with hot water is usually sufficient. Food should not be stored in the carbon steel pan, nor should it be left soaking in the sink to prevent rust. However, if surface rust appears on the pan, it is not unusable; the rust can be removed with a scouring pad or steel wool, for example. It is also a good idea to apply a drop of rapeseed oil after use, washing, and drying to prevent surface rust from forming during storage.
Suitable for all heat sources and cooktops, including induction cooktops. The frying pan can also be used in the oven (280 °C).

The pressed frame of the carbon steel pan may occasionally warp slightly. To prevent this, avoid placing a hot pan in cold water. Also, using the pan on the stovetop at full power may cause warping. If warping occurs, first heat the pan slightly, then place it upside down on a sturdy surface and tap the center of the pan with a hammer.
