A professional frying pan with excellent cooking properties and a virtually endless lifespan! Carbon steel pans are a good alternative to Teflon pans, and like cast iron, they require a little care. A well-maintained carbon steel pan develops a natural non-stick surface formed by fat and carbon, reducing the need for seasoning and increasing its non-stick properties. A frequently used carbon steel pan even has the cooking properties of a cast iron pan and the non-stick properties of a Teflon pan! In addition, you can safely use metal utensils with the pan.

The De Buyer Mineral B series has a pre-treatment of a completely natural and chemical-free organic beeswax coating. The coating protects the pan from rust and helps with the pan's break-in. It forms the first cooking surface for the carbon steel, while also improving the pan's non-stick properties. Wash the pan with hot water to remove any storage dust before the first use - most of the beeswax will be removed. The small amount of wax left behind is not a problem but, on the contrary, helps with the pan's break-in. You can also season the pan if you wish - see instructions in the video link below.

Perfect for omelets! The pan produces omelets with a wonderfully crispy crust, but soft and creamy inside. The pan's rounded shape makes cooking and flipping omelets easy and quick.

Carbon steel is not as porous a material as cast iron, so you can safely cook all ingredients. With high-protein ingredients, such as eggs or white fish, it is advisable to be careful and lower the temperature significantly. You shouldn't try to keep the carbon steel a bright steel color, as it will change color with use. The pan's interior surface will darken, and when the interior surface is completely black, its natural non-stick surface is at its best.

Carbon steel pans should not be washed in the dishwasher; hand washing is usually sufficient with just hot water. Carbon steel pans should also not be used for food storage or left soaking in the sink to prevent rust. If rust appears on the surface, the pan is not unusable, as the rust can be removed with a scouring pad or steel wool, for example. After use, washing, and drying, it is a good idea to apply a drop of rapeseed oil to prevent surface rust during storage.

Suitable for all heat sources and cooktops, including induction cooktops. The frying pan can also be used in the oven (200 °C max 10 min).

  • Outer diameter at the top edge: 24 cm
  • Thickness: 2 mm

The pressed frame of the carbon steel pan may occasionally warp slightly. To prevent this, avoid placing a hot pan in cold water. Also, using the pan on the stovetop's full power may cause warping. If warping occurs, first slightly heat the pan and place it upside down on a sturdy surface, tapping the center of the pan with a hammer.
